A lovely white fish, the mild sweet and smoky flavours of monkfish blend perfectly with the distinctive flavours of the oriental rice, to create a healthy, nutritious and delicious dish.
Monkfish is packed with B vitamins which help support adrenal function, calming and maintaining a healthy nervous system whilst the Omega-3 in monkfish can also help with low mood, dry skin, and aching joints.
1. Germinate bioSnacky® Mung beans sprouting seeds for 4 to 5 days. Harvest and store in an airtight container.
2. Boil the rice in salted water. Meanwhile, peel the onion and dice, cut the fennel and peppers into thin slices and sauté all in a wok with the sesame oil. Then add ¼ litre of water and soy sauce and when ready add the rice and stir.
3. Add cooked, cubed monk fish and stir. Season with a pinch of ginger and Herbamare® Spicy seasoning salt. Peel apples, cut into quarters and then thin disks. Carefully add to the mixture with the bioSnacky® mung bean sprouts and raisins.
4. Allow to stand for 2 minutes and serve.
